Gulf Wild Shrimp

From September to June we harvest Litopenaeus setiferus, white shrimp are found from North Carolina to the Gulf of Mexico.  Renowned for its firm texture and light/sweet flavor, most of this species is landed from the Carolina Low Country.  Handsome in appearance, they are grayish-white and randomly tinged about the tail and legs with green, red or blue hues. Prime harvest season is September through winter when cool South Atlantic waters lure these shrimp to shallow creeks and estuaries.
